Sweet Purple Potato's with coconut milk sauce


 Sweet purple potato's , one of many variant from sweet potato's. It has a beautiful colour and good taste .  The texture is soft after you steam it about 30 minutes and has a sweet and savory taste. It great to make something different with this ingredients.  And I would like to make some thing sweet and warm ...so I'll make it this.


We usually call this dish as a 'bubur candil' but we use sticky rice powder or sweet potato with white colour. I am only add cassava and a little cornstarch powder to make the soup is thick.

And here is the recipe :

500 sweet purple potato, mashed + 2 tbs rice powder+1/2 tsp salt, mis all and make it like a little ball
100 grams cassava, cut and steam 20 minute

700 ml water
100 g palm sugar
3 cm ginger
a pinch of salt
2 pandan leave's
2 tsp cornstarch powder, mix with 1 tbs water

Sauce :
200 ml coconut milk
a pinch of salt
Boiled all

How do :
1. Boiled water and add ball of sweet purple potato's.  Watch until the ball float.
2. Add palm sugar,ginger, salt , mix until mixture and fill cornstarch powder
3. Cook until boiled and mix all

 To serve : Fill all ingredient on bowl and serve with coconut sauce as a topping
 
Hmmm.....sweet and warm...
